Instant Mix Achar (Pickle) Recipe containing Carrot, Radish and Green Chilli #FoodieFriday

It is Friday and time for the #FoodieFriday feature. Yay!

Achars or pickles are always a hit with me with their lip smacking tanginess and the ample scope of experimentation with a variety of ingredients.

Today's Mix Achar recipe uses ingredients like Carrot (Gajar), Radish (Muli) and Green Chilli (Hari Mirch) and contains the goodness of these healthy ingredients. Great accompaniment to all flat bread food items like paratha, roti, kulcha and bhatura as well as rice dishes like biryani and pulao, this pickle is not only quick but also simple to make with easily available ingredients and gets ready in a jiffy!

All the vegetables that I have used are organic and from my own garden, making them chemical free.
You can include other vegetables like beetroot, turnip, ginger, garlic etc.

Instant Mix Achar (Pickle) Recipe

Cooking Time: 5 minutes


1 cup carrot (gajar) cut in thin, long slices.

1 cup radish (muli) cut in thin, long slices.
1 cup of green chilli (hari mirch) cut in half.
2 tbsp mustard oil,
2 tsp crushed Aniseed (Saunf),
2 tsp crushed Mustard seeds (rai),
1/2 tsp Nigella seeds (kalonji),
2 tsp crushed fenugreek seeds (methi),
1/4 tsp asafoetida (hing)
1 tsp turmeric powder (haldi)
1/2 tsp red chilli powder (lal mirch powder)
Salt to taste.

Steps to prepare the Instant Mix Achar (Carrot, Radish, Green Chilli achar/pickle):

1) Mix all the ingredients together in a bowl except the oil.

2) Heat oil in a pan.
3) Add the mixture of step 1 in the oil and mix well.
4) Remove from the heat and serve right away with Roti, Parathas like the zero-oil Sattu Paratha, Pulao etc.
5) You can also store it in a clean and dry container to relish later. Refrigerate to keep it fresh until a week.


1) You can also add other vegetables like turnips to this pickle.
2) To keep the pickle fresh and to stop it from spoiling, always use a dry and clean spoon to take out the pickle. Keep it away from moisture which can cause to spoil early.
