Today's recipe is one of my favourites. High in nutrition like protein, manganese, folate, magnesium and other healthy nutrients and fibre rich, this mix sprouts pulao is super tasty, low in fat, so easy to make and a winner with everyone!

Preparation Time:


15-20 minutes


Recipe for:

4 people


Ingredients required:


1 cup mix sprouts,
1 cup rice,
2 cups water,
1 cup mix vegetables (any vegetables of your choice),
1 tsp cumin seeds (jeera),
A pinch of hing (asafoetida),
1 tej patta,
1 green cardamom (hari elaichi),
1 tsp Desi Ghee (Clarified Butter) just enough to crackle the cumin seeds,
1/2 tsp turmeric powder (haldi),
1 tsp biryani or pulao masala (optional),
1 tsp of coriander powder (dhania),
Salt to taste

Steps to prepare Healthy Mix Sprouts Pulao:


1) Heat Desi Ghee in a cooker.

2) Add Cumin (jeera), Asafoetida (Hing), Green Cardamom (Hari elaichi), tej patta and let it crackle.

3) Add washed rice, mix vegetables, mix sprouts and all the spices. Mix for a few seconds.

PS: In this variant of this recipe I have used tomatoes, onion, spinach, carrots and green chillies as mix vegetables. All these vegetables are organic and homegrown in my own garden.

For mix sprouts, I have used Moong Dal (Green Gram) Sprouts and Kala Channa (Black Chickpeas) Sprouts.

4) Add 2 cups of water and close the lid with the whistle.

5) Cook on high flame until 2 whistles and then turn off the gas.

6) Serve hot with chutney, raita and papad.

Tips:


1) You can replace white rice with brown rice in this recipe to increase its health quota even more.

2) Include sprouts of all types of legumes and chickpeas.

3) Customise this recipe by adding any vegetables of your choice.

4) You can also add tofu or paneer to further amp the nutrition value.
