Today I will be sharing a very simple and healthy one-pot recipe with you that I love eating all year round. Sabudana Khichdi is very popular in India and is specially eaten during fasts. However, this easy to make dish can be made anytime and enjoyed without the hassle of requiring too many ingredients to prepare it!

Made using soaked Sabudana, in my variant I have used minimal ingredients, spices and very little oil making it very healthy without compromising its delicious taste.

How to soak the Sabudana?


In order to have Sabudana where each pearl is seen separately and no clumps form while cooking, it is essential to soak it using the below steps.

1) Wash the Sabudana under running water until any excess starch gets removed and you see clear pearls.

2) Soak the Sabudana in 1:1 ratio. That is if you are soaking 1 cup of Sabudana then use 1 cup of water to soak it in.

3) Let the Sabudana soak overnight.

4) In the morning you will see that no water remains in the Sabudana bowl but still wash and drain any excess water using a strainer or colander.

5) Check if the Sabudana is ready to cook by pressing a pearl between your thumb and index finger. It should smash easily.

Cooking Time: 5 minutes

Steps to prepare Healthy, Low oil, non-sticky, simple Sabudana Khichdi:


1) Take a thick base pan or kadhai.

2) Add 1 tsp oil or ghee.

3) Add meethi neem (curry leaves), 1 chopped hari mirch (green chilli), 1 tsp rai (mustard seeds and stir until they crackle.

4) Add 1 chopped tamatar (tomato), 1 mashed boiled potato (aloo), Sendha Namak (salt) to taste and 1 tsp turmeric powder (optional).

5) Stir and cook for a minute.

6) Add the overnight soaked Sabudana and stir for a few minutes until the pearls become translucent. Keep the flame low.

7) Dish out the Sabudhana Khichdi in a serving bowl, garnish with the juice of half a lemon and enjoy with plain yogurt or raita!

Extra Ingredients that you can add:


1) Roasted Peanuts
2) Roasted Cashew
3) Fried Potato slices
4) Cumin seeds along with mustard seeds for tadka or tempering.
5) Spices like Red chilli powder, coriander powder etc. can also be used.
6) Fresh coriander (dhania) can be used for garnishing.
7) Sugar can also be added along with the salt to add a sweet-salty taste to this dish.
8) Lemon juice can also be added to add an extra tang to the recipe while garnishing.
9) Add ginger to increase the flavour of this recipe.
10) Use Sendha Namak (Rock Salt) if making this dish for fast.

There are so many ingredients you can add as per your demand and availability. This is a pretty versatile dish that can be made using just the bare essentials or customised according to individual tastes.
